What about Wrestling, Lacrosse, and Hockey, for instance?

Good point. But, the SEC just doesn't compete at the NCAA level in those sports. So, we don't cover them. Some of the SEC schools have wrestling, lacrosse, and/or hockey clubs. But, there are no NCAA level teams.
This is actually an interesting issue you raise. This site really hasn't investigated how the SEC compares in the number of sports it competes in. Perhaps an analysis of that issue would support an argument for another conference to be #1. I really have no idea if the SEC competes (at the NCAA level) in more or less sports than other conferences.
